It’s been crazy the last few weeks! A quick trip to Vegas, followed by my son’s Valentine’s Day, having to take my little one in for an ear infection, my hubby coming home from working in Vegas for a month, and then my sweet 97 year granny passing away. Even though funerals are hard, it is always great to see family!
This recipe is a favorite in my house and of course it’s in the crockpot!
What You Need:
1 can of black beans, rinsed & drained
1 can of corn, drained
1 can of white northern beans, rinsed & drained
1 package of frozen sweet potatoes or 1 sweet potato, skinned and chopped into small chunks
1 pound of ground turkey
1 can of pure pumpkin
1 can of diced tomatoes
1 tsp of cinnamon
Dash of salt and pepper
Garnish with Cheese & Sour Cream
How to Make It!
1. Brown ground turkey and season with salt & pepper
2. In a crockpot, add the rest of the ingredients and seasonings.
3. Cool on High for 3 hours or on low for 5 hours.
