Slow Cooker Taco Soup

Happy Monday Friends! We are off to the zoo for a play date before it gets too cold.  I am all about soups during the Fall, especially if I can dump it into a slow cooker and forget about it.  This one is perfect for your Taco Tuesday night!


  1. Ground Turkey (1 pound)
  2. 1/2 onion, chopped
  3. 4 cups of Chicken Broth
  4. 1 can of fire roasted corn, drained
  5. 1 can of black beans, drained
  6. 1 can of kidney beans, drained
  7. 1 can of diced tomatoes
  8. 1 can of Rotel
  9. 1 Tablespoon of Chili Powder
  10. 2 Teaspoons of Cumin
  11. Big dash of Salt and Pepper
  12. Big dash of garlic powder
  13. 1 Tbsp. Olive Oil


  1. Saute diced onions in olive oil until trasncelent.
  2. Cook ground turkey with onions and season with salt, pepper, and garlic powder
  3. Add meat, and the rest of the ingredients into the crock pot.
  4. Cook on HIGH for 4-5 hours or on LOW for 8-9 hours.
