Happy Sunday y’all!
My sister came to visit and made this pico that I have been eating non.stop.! It is perfect for this hot summer weather and it’s healthy. Can I get a high five!!
As y’all know, I do simple and that’s exactly what this is.
- 1 cucumber
- 1/2 onion
- 1 tablespoon – Minced garlic
- Green pepper or any kind
- 2 cans of Rotel
- 1 can of diced tomatoes
- Hand full of cilantro
- Ms Dash original
- Splash of white vinegar
- Chop the cucumber, onion, and cilantro.
- Drain the diced tomatoes and 1 can of Rotel. Keep and add the juice for the last can of Rotel.
- Mix all the ingredients, couple dashes of Ms. Dash, and the splash of vinegar. Mix and refrigerate.
I usually enjoy with chips or just by itself as a side. Enjoy!
